 Today’s Recipes: Classic Ratatouille
RatatouilleIngredients:
  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 2 medium zucchini, chopped
  • 1 medium eggplant, cubed (or 2 small ones)
  • 4 large juicy tomatoes, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped (you can also use yellow peppers)
  • 2 cloves garlic, crushed
  • 2 teaspoons Herbs de Provence (or any mixed herbs you prefer)
  • Salt and pepper to taste
Instructions:
  1. Prep your ingredients:
    • Begin by cutting all your vegetables (onion, zucchini, eggplant, tomatoes, and peppers) into bite-sized pieces.
    • Note: Avoid cutting eggplant ahead of time as it can change color quickly.
  2. Start cooking:
    • Heat 2 tablespoons of olive oil in a large Dutch oven (you can use cast iron or any large pot).
    • Add sliced onions to the pot and sauté for a few minutes until they start to soften.
    • Next, toss in the zucchini and cook for a couple of minutes.
  3. Add the remaining vegetables:
    • Once the zucchini has softened, add the cubed eggplant and chopped tomatoes.
    • Toss in the chopped green and red peppers (or any other color peppers you prefer).
  4. Simmer the ratatouille:
    • Stir everything together and let it cook uncovered for about 20-25 minutes, stirring every 5 minutes to make sure nothing sticks to the bottom of the pot.
  5. Add garlic and herbs:
    • After about 20 minutes of cooking, add the crushed garlic and Herbs de Provence.
    • Stir well and let it cook for another 5-10 minutes until all the vegetables are tender and the flavors have melded together.
  6. Serve:
    • Serve the ratatouille hot with some crusty bread, or on its own as a healthy, vegetable-packed meal.
