 Today’s Recipes: Sweet Strawberry Tacos and Savory Breakfast TacosSweet Strawberry Taco:Ingredients:
  • 6-inch tortillas
  • Fresh strawberries (store-bought or home-grown)
  • Cream cheese
  • Yogurt (plain or vanilla-flavored)
  • Honey
  • Basil leaves
  • Blueberries or blackberries (optional)
Instructions:
  1. Heat a teaspoon of butter in a pan over medium heat.
  2. Brown each tortilla shell for a couple of minutes on each side until warm and slightly crispy.
  3. In a mixing bowl, combine cream cheese, cinnamon, and honey. Mix until well combined.
  4. Fold in the yogurt gently until fully incorporated.
  5. Spread the cream cheese and yogurt mixture onto each tortilla shell.
  6. Place sliced strawberries (and optional berries) on top of the cream cheese mixture.
  7. Sprinkle with chopped basil leaves.
  8. Fold the taco in half and serve immediately.
Savory Breakfast Taco:Ingredients:
  • 6-inch tortillas
  • Eggs
  • Milk
  • Assorted vegetables (peppers, kale, celery)
  • Salt and pepper
  • Tomato slices
  • Basil leaves (optional)
Instructions:
  1. In a bowl, whisk together eggs and a splash of milk.
  2. Heat a teaspoon of butter in a pan over medium heat.
  3. Pour the egg mixture into the pan and scramble until cooked through.
  4. Layer assorted vegetables onto each tortilla shell.
  5. Top with scrambled eggs and tomato slices.
  6. Sprinkle with salt and pepper to taste.
  7. Add chopped basil leaves if desired.
  8. Fold the taco in half and serve immediately.
