Nicolette Hahn Niman is a rancher, former environmental attorney and author. She has written three books about sustainable and regenerative meat generation, including her latest “ Defending Beef: The Ecological and Nutritional Case for Meat,” and has been a contributor to The New York Times, the Wall Street Journal, the Los Angeles times, and The Atlantic. She lives in Northern California with her two sons and her husband, Bill Niman, the founder of meat companies Niman Ranch and BN Ranch.
