Welcome to the St. Andrews Jezebel podcast! we have a special guest joining us: Justin Buxton, one of the new owners of Little Village. Justin shares with us the story of how this beloved restaurant got started and what he's learned along the way.
  • Fins on the Beach started in 2009 and opened up in St. Andrews in 2012, inside the small Little Village. The space was about the size of a food truck. Justin and his wife Karen started with a simple idea - to spotlight the fish taco. At the time, they couldn't find any place in the area that served fish tacos. So they decided to fill the void in the market and create their own spot.
  • Justin developed all the recipes for the menu himself. His inspiration came from his love for fresh food and bold flavors from his travels in the Caribbean and his Cajun roots. He wanted to create something unique and flavorful that would stand out from the crowd. While there have been some specials throughout the years that came from the ideas of employees, the basic menu was created by Justin himself.
  • Justin talks about the challenges of running a restaurant. It's not just about cooking great food - it requires attention to detail, from managing employees to taking care of paperwork and bills. Justin admits that it's a lot of work, but he believes it's worth it because of the community they've built. They've created a small, grassroots business that keeps it simple and fresh while making a positive impact on the community.
